Ori Menashe and Genevieve Gergis converted a former industrial warehouse in the Arts District into one of Los Angeles' most celebrated restaurants, and Bestia has sustained that reputation for over a decade by doing the same things that made it famous in the first place. The approach is Italian at its root — house-cured salumi, handmade pasta, wood-roasted whole animals — but filtered through California ingredients and the particular energy of the neighborhood that grew up around it. Getting a table requires planning, and the room at peak service is genuinely loud in the way restaurants used to be before acoustics became a design consideration. Come for the lasagna and Genevieve's pastry creations; stay as long as you can.
