Edomae sushi is defined by its vinegared rice, its patience — certain fish are aged, marinated, or lightly cured before service — and its conviction that the preparation should amplify rather than disguise the ingredient. The otoro arrives as a thin rectangle of fat-marbled tuna belly that requires no sauce and no comment. The live kuruma ebi, a Japanese tiger prawn, is split tableside and served as two courses: the head grilled, the tail as nigiri. The room is spare and the conversation is quiet — this is a meal designed to hold your attention entirely. The most classical sushi experience available in Los Angeles.
