Yoshiyuki Inoue works in the Edomae tradition — fish aged, cured, and treated deliberately rather than served as fresh as possible — and the omakase moves through it at a pace set entirely by the counter. There are very few seats and one thing on offer. The Michelin star it holds is the sort that reflects consistency over years rather than a single impressive evening.
