Mario Carbone, Rich Torrisi, and Jeff Zalaznick took over the Four Seasons space in the Seagram Building in 2017 and turned it into a mid-century American chophouse without disturbing what Philip Johnson and Mies van der Rohe left behind — the room is landmarked, and it remains one of the great interiors in New York. The cooking is deliberately theatrical: prime rib wheeled over and carved at the table, a duck press brought out for the pasta, dishes recovered from menus of the 1950s and 60s and cooked far better than they were then. It is a performance and an expensive one. It is also very hard to leave unimpressed.
