The restaurant operates as a straightforward homage to the great American prime rib parlors of the mid-twentieth century — the kind of rooms that understood that a great piece of beef, properly aged, properly roasted, and properly rested, needed nothing from the kitchen beyond a sharp knife and good heat. The Yorkshire pudding absorbs the drippings. The creamed spinach is the correct vegetable. The room is dark and intimate and smells magnificently of beef. 4 Charles is one of the best reserved seats in New York.
