Marcus Samuelsson opened Red Rooster in 2010 and it changed what a Harlem restaurant could be commercially without pretending to be from somewhere else. The menu runs Southern at its base with Ethiopian and Swedish detours that reflect Samuelsson's own biography, and the fried yardbird — brined, spiced, served with white mace gravy — is the dish that holds it together. The room is large, art-filled, and consistently loud, with live music downstairs at Ginny's. It draws a mixed crowd of neighborhood regulars, downtown visitors, and tourists, which is roughly what it set out to do.
