Au Cheval opened in Chicago as a diner that took its griddle far too seriously, and the TriBeCa outpost down Cortlandt Alley does the same thing to the same effect. The double cheeseburger is the headline — two prime patties, sharp American cheddar, dijonnaise, pickles and onions, with thick-cut bacon that comes in slabs and an optional fried egg that most regulars consider mandatory. Beyond it the menu is short and unfashionable in the best way: a fried house-made bologna sandwich, fried chicken sliders, roasted bone marrow, a handful of salads and prime steaks. The room is dark, narrow and loud, there is no natural light, and the kitchen runs late. Book on Resy, or take the wait and drink at the bar.
