Keith McNally's Village chophouse since 1937 — the Black Label burger is still the benchmark
The Minetta Tavern opened on MacDougal Street in 1937 and Keith McNally took it over in 2009, restoring the room rather than reinventing it — red leather banquettes, tobacco-stained murals, caricatures of Village figures nobody can identify anymore. The Black Label burger, ground from dry-aged prime cuts and served with caramelized onions, effectively created the category of the expensive New York burger and remains the best argument for it. The côte de boeuf is the serious order. The room is loud, the lighting is generous, and the late seating gets genuinely fun. Fifteen years into the McNally era it still feels like the Village at its most self-assured.
