Enrique Olvera brought the sensibility of his Mexico City restaurant Pujol to Flatiron in 2014 and produced one of the most significant restaurant openings in New York of the decade. Cosme's Mexican cooking is rooted in technique and tradition and completely uninterested in the version of Mexican food that American restaurants had been making: the duck carnitas — confit duck leg with masa, avocado, and salsa — is a landmark dish, the aguachile negro is a study in bitterness and acid, and the corn husk meringue dessert has a following that outlasts any trend. The room is warm and handsome. The bar serves one of the best mezcal programs in New York.
