Cookshop opened on Tenth Avenue in 2005, before the High Line existed and before this stretch of Chelsea filled with galleries and glass towers, and it has held its position through all of it. The kitchen cooks seasonally and mostly over wood, and the menu shifts often enough that regulars have to actually read it. Brunch is the meal it is best known for — the pancakes and the egg dishes are reliable, the Bloody Mary is properly made, and the windows open onto the street in warm weather. It is the rare Chelsea restaurant that survived the neighborhood becoming a destination.
