Danny Meyer's original, opened 1985 and moved to Park Avenue South — the template for New York hospitality
Danny Meyer opened Union Square Cafe in 1985 at twenty-seven years old, and much of what is now taken for granted about American restaurant service — that the staff should be glad you are there, that a bar seat should be a real option, that a great meal need not be formal — traces back to this room. It moved to Park Avenue South in 2016 and carried the feeling with it, which is not a given. The cooking is New American with a strong Italian accent and no interest in being clever for its own sake. Sit at the bar, order the burger, and watch a dining room being run correctly.
