Keith McNally opened Balthazar in 1997 and it has been full every night since. The room is a precise recreation of a Paris brasserie — zinc bar, tiled floors, mirrors, warm amber lighting — and the effect is so convincing that the question of authenticity stops mattering. The shellfish plateau is the move for groups: an architectural construction of oysters, clams, shrimp, and lobster that arrives on a stand of ice. The steak frites is the dinner standard. Brunch at Balthazar — eggs Benedict, a Bloody Mary, the morning light through the front windows — is one of the best arguments for living in New York.
