Jean-Georges' farm-to-table room inside ABC Carpet — the roasted carrot and avocado toast that launched a thousand menus
ABC Kitchen opened in 2010 inside the ABC Carpet & Home building and did more than any other restaurant to make greenmarket sourcing a mainstream expectation rather than a specialist position. Jean-Georges Vongerichten's kitchen turns out food that reads simple and is not — a roasted carrot and avocado salad that has been copied onto menus across the country, whole wheat pizzas with a cracked egg, vegetables that arrive tasting like the argument for eating seasonally. The room is all reclaimed wood and mismatched chandeliers and remains genuinely beautiful fifteen years on. The salted caramel sundae is not optional.
