Junya Yamasaki came to the Arts District by way of Koya in London, and Yess is what happened when he stopped translating Japanese cooking for an audience and simply cooked it. The room is a converted 1920s bank building on East 7th, all height and hard surfaces and old light, and the food inside it is quieter than the setting suggests — dashi-driven, seasonal, more interested in clarity than in spectacle. The wine and sake program is the part regulars talk about, weighted heavily toward natural producers and poured by people who can explain why. It is not a large restaurant and it does not turn tables aggressively, so plan the evening around it rather than fitting it in.
