Sugarfish has been Nozawa's answer to accessible omakase since 2008: no menu, just 'Trust Me' — a predetermined sequence of warm rice, clean cuts of fish, and hand rolls served at the pace the kitchen sets. The Beverly Hills location on Canon Drive is one of the easiest places in LA to eat world-class sushi without a reservation or a three-month booking window. The tuna and salmon sashimi set the standard; the blue crab hand roll, wrapped nori-crisp and eaten immediately, is the reason people come back. There are bigger sushi experiences in the city, but none more honest about what sushi should be.
