Beverly Hills' pasta laboratory — Evan Funke's handmade pasta behind a glass wall, and a rooftop bar with views of the Hollywood Hills
Evan Funke built Funke around a glass-enclosed pasta lab where diners can watch sfogline — expert pasta rollers — work through the handmade dough that becomes the night's menu. Funke trained in Bologna and at various Italian stations specifically to understand handmade pasta as a tradition rather than a technique, and the menu at this Beverly Hills three-story showpiece reflects that. Reservations require an alarm set for the 9 AM Resy release seven days out, but the rooftop Bar Funke accepts walk-ins for Sicilian-style sfincione pizza, caviar, and crudos against a view of the Hollywood Hills that makes Beverly Hills feel earned.
