About Spago

Wolfgang Puck opened the original Spago on Sunset Strip in 1982, and the Beverly Hills location that replaced it has maintained the position that the first one established: the restaurant that defined California Cuisine as a recognizable genre. The smoked salmon pizza — thin crust, crème fraîche, cured salmon, caviar — was the dish that made pizza acceptable at a fine dining table and has been on the menu ever since. The room draws the celebrity clientele that has always found Spago reliable for discretion and serious food in the same evening, and the Kaiserschmarrn dessert — a deconstructed Austrian pancake with rum raisins — is the closing argument for why Austrian pastry belongs in Beverly Hills.
