Nobu Matsuhisa opened this restaurant on La Cienega in 1987 after previous restaurants in Lima and Anchorage had sharpened his cooking toward the Peruvian-Japanese fusion that would become his signature style. The new-style sashimi — raw fish dressed tableside with hot olive oil and soy, the heat partially cooking the surface — was invented here and has been copied thousands of times without being equaled. The black cod with miso predates all the global Nobu locations that now serve it, and eating it in the original room adds a layer of context that changes how it tastes. The restaurant remains quieter and more personal than any of the international outposts.
