The dough ferments 72 hours, bakes at extreme heat in a wood-fired oven, and arrives with that characteristic Neapolitan char, leopard spotting, and central softness that tells you everything is working correctly. The sauce is sweet San Marzano, the fior di latte milky and fresh. This is as close to the Naples original as you can get without a flight, and the wait is almost never long if you arrive at opening.
