Armando De La Torre opened Guisados in 2010 on César E Chávez Avenue with the specific goal of serving the braised guisado-style fillings that are the everyday cooking of Mexican home kitchens — not carne asada or al pastor, but the slow-braised chicharrón in salsa verde, tinga de pollo, and estofado that take all morning to prepare. The masa tortillas are made to order, and the combination of fresh-pressed masa with the deeply flavored braises creates a taco that has no equivalent in the city. The sampler of six allows first-timers to work through the menu, and the chiles toreados — blistered and smoky — provide the heat that the guisados themselves don't.
