Cassell's has been making hamburgers in Los Angeles since 1948, revived inside The Line Hotel in Koreatown. The original was one of the city's most beloved burger counters, and the current version honors that history: hand-formed beef patties cooked on a flat-top griddle, dressed simply with American cheese, lettuce, and tomato on a soft bun. The patty melt adds caramelized onions and swiss. These burgers exist entirely outside the smash-burger trend — they're built on restraint and seven decades of doing the same thing well.
