Four decades of ox-bone broth on 5th Street — the milky, unseasoned sullungtang you salt to taste yourself
Han Bat has been simmering ox bones on 5th Street since the mid-1980s and the menu has barely moved since. Sullungtang is the whole point: bones boiled long enough that the broth goes opaque and milky, poured over slices of brisket and a nest of somyeon noodles, and served completely unseasoned. The seasoning is your job — salt, pepper, the chopped scallions on the table, and a spoonful of rice tipped in at the end. The kkakdugi, cubed radish kimchi fermented until it is properly sour, is what you eat between mouthfuls, and the juice from the jar is what regulars stir into the bowl. It is one of the cheapest good meals in Koreatown and it opens at 7 in the morning, which makes it as much a breakfast as a dinner.
