Keith Corbin grew up in Watts and cooks like someone with a specific argument to make about what California soul food can be. Alta Adams, which he runs with Daniel Patterson, sits on West Adams Boulevard in a neighborhood that has changed a great deal in the years since it opened, and the restaurant has managed the unusual trick of belonging to both the old version and the new one. The fried chicken and the collards are the entry points; the vegetable cooking is where the kitchen's California side shows. The room is green and open and genuinely friendly in a way that is difficult to manufacture. Saturday brunch is the meal to build a weekend around.
