Jeremiah Stone and Fabián von Hauske opened Wildair next door to Contra as the loose, standing-room version of what they were doing, and it turned out to be the more influential of the two. The format is small plates and natural wine, which by now sounds like a description of half the city, but the cooking here has actual technique underneath the casualness — a tartare that is properly seasoned, vegetables treated as the main event rather than a gesture. The list is deep and the staff will steer you well if you tell them what you like. The room is tiny and gets loud. That is the intended effect.
