Rich Torrisi spent a decade building Italian-American cooking into something that could hold its own in a serious dining room, and Torrisi, in the ground floor of the Puck Building on Mulberry Street, is the fullest version of that project. The menu reads familiar — antipasti, pasta, a whole fish — and then arrives with technique that reframes each one. There is a caviar course. There is a bread service people write about. The room is dark wood and low light and feels like a restaurant that expects you to stay for three hours. It is expensive and it is difficult to book, and it is one of the few New York restaurants where both facts are justified.
