Nozomu Abe grew up in Hokkaido, trained in Tokyo, and opened Sushi Noz on East 78th Street in 2018 behind a door with no sign on it. The counter is hinoki cypress, built in Japan by shrine carpenters and reassembled in New York, and it seats eight — with a second six-seat room, the Ash Room, alongside. The style is Edomae: fish cured, aged, and dressed with the techniques Tokyo developed before refrigeration, served at the temperature each cut requires. It holds two Michelin stars. There are two seatings a night and effectively no way to eat here casually, which is the entire proposition.
