Ed Schoenfeld and Joe Ng's inventive dim sum on the Upper West Side — Pac-Man dumplings and serious Cantonese technique

About RedFarm

RedFarm's premise sounds like a novelty and is not: Joe Ng is a dim sum chef of real pedigree, and the whimsy in the presentation sits on top of technique that would hold up in any Chinatown parlor. The Pac-Man-shaped shrimp dumplings get photographed; the crispy beef and the soup dumplings are why people come back. The pastrami egg roll, made with Katz's pastrami, is the dish that best explains the restaurant's whole disposition. The Upper West Side room is bright and communal and moves fast. It is more expensive than dim sum ought to be, and it is good enough that the argument mostly stops there.
