Frank Tuttolomondo opened Mama's Too on Broadway in 2018 and turned it into the reference point for the modern New York square slice. The Upside-Down Sicilian — cheese under the sauce, edges lacquered and crisp from the pan — is the order, and the vodka square is the one people come back for. The round plain slice is also serious: well-fermented dough, restrained cheese, a clean tomato flavor. It is a counter operation with a couple of stools, so the plan is to eat standing up or walk it a block to Riverside Park. Popular squares run out well before closing.
