Pizza 4P's started in Ho Chi Minh City, founded by a Japanese couple, and grew into one of Southeast Asia's most admired restaurant groups before opening its first American location in Greenpoint. The premise is Neapolitan pizza filtered through Japanese ingredients and technique — miso, shiso, seafood toppings — with mozzarella and burrata made in-house daily. The half-and-half pizza format lets you order two things at once, which is genuinely useful. The room is bright and designed with real care. It is one of the most interesting pizza openings New York has had in years, precisely because it did not come from Naples or New Haven.
