Carroll Gardens' legendary BYOB pizza institution — hand-stretched dough, wood-fired perfection, and waits that have become their own Brooklyn ritual
Mark Iacono opened Lucali in 2006 in a former candy store on Henry Street, teaching himself to make pizza from scratch in a building he renovated himself. The result is one of the most beloved restaurants in Brooklyn: thin, delicate pies built on hand-stretched dough, topped sparingly, baked in a wood oven until the crust achieves a combination of char and chew that nobody has successfully replicated. There are two things on the menu — pizza and calzone. You bring your own wine. You put your name in early and wander Carroll Gardens for a few hours. The wait is a ritual. When you finally sit down, the simplicity of it — dough, cheese, basil, olive oil — makes perfect sense.
