Joe & Pat's opened on Victory Boulevard in 1960 and spent almost six decades perfecting a cracker-thin Staten Island-style crust before opening a Manhattan location and finding a much larger audience. The vodka pie — pink sauce, fresh mozzarella, basil — is the one that made the reputation, but the plain pie is the better test and it passes: the crust is thin enough to snap and strong enough not to sag. The room is a proper family Italian restaurant with a full menu beyond the pizza. This is the original, and it is still the one to eat at.
