Hometown Bar-B-Que opened in Red Hook in 2013 in a repurposed industrial space and has been the definitive answer to where to eat serious barbecue in New York ever since. Pitmaster Billy Durney smokes his meats over oak wood: the brisket emerges with a thick bark, a vivid pink smoke ring, and a fat cap that renders down to something approaching butter. The jalapeño cheddar sausage is house-made and excellent. The lamb ribs, when available, are extraordinary. Red Hook is a deliberate destination — no subway stop, a schlep from Manhattan — but the warehouse space with communal tables, a strong bourbon list, and bluegrass on weekends makes the whole trip feel like a proper barbecue excursion.
