Defonte's has been making sandwiches on Columbia Street since 1922, back when Red Hook was a working waterfront and the shop was feeding longshoremen. The sandwiches are built accordingly: enormous, layered with fried eggplant, roast beef, fresh mozzarella, and gravy, on bread that can structurally handle it. The Nicky Special is the canonical order. It closes in the late afternoon and does not do dinner, which is a hint about who it was built for. It is one of the last genuine survivors of a category New York used to have on every block.
