Hart's is about thirty seats on Franklin Avenue and has been one of the most quietly excellent restaurants in Brooklyn for a decade. The menu is coastal Mediterranean in spirit — grilled whole fish, raw preparations, vegetables that get as much attention as anything else — and it changes often enough that regulars keep finding new reasons. The wine list is short and smart. Nothing about the room announces ambition, which is precisely why the cooking lands the way it does. It spawned Cervo's and The Fly, and it remains the best of the group. Book ahead; there is no realistic walk-in strategy.
