The Oyster Bar has been in the lower level of Grand Central since the terminal opened in 1913, under Rafael Guastavino's vaulted tile arches, which remain the most impressive ceiling in any restaurant in the city. The oyster list is printed daily and runs to dozens of varieties from both coasts. The move is to sit at the curved counter rather than in the dining room, order a spread of oysters and the pan roast — a rich, peppery stew made in a steam-jacketed kettle in front of you — and watch the shuckers work. It closes on weekends, which is an odd thing for a landmark to do, and entirely in character.
