Via Carota takes no reservations and there is almost always a line, and the people in the line are almost always correct. Jody Williams and Rita Sodi's West Village trattoria serves Italian food with the ease of a place that has nothing to prove — the insalata verde, a bowl of dressed bitter greens that has been called the best salad in New York, is the thing that converts skeptics. The cacio e pepe is as good as any in the city. The room is intimate and warm and somehow manages to feel like a neighborhood restaurant even when half the city is trying to eat there. Via Carota operates as though the concept of 'hype' does not apply to it, which is why the hype never fades.
