Sushi Note took the one idea nobody in Los Angeles had bothered to execute properly — that great sushi and great wine belong at the same counter — and built a restaurant around it in a Sherman Oaks strip of Ventura Boulevard. Chef Kiminobu Saito works with fish flown from Japanese markets several times a week, and the omakase moves at the pace of a conversation rather than a performance. The wine list runs past ninety bottles with an emphasis on grower Champagne and white Burgundy, and the staff will actually argue with you about pairings, which is the point. The Michelin Guide noticed. The Valley has had good sushi for decades; this is the room that made people drive over the hill for it.
