About Shin Sushi

Shin Sushi occupies a suite in an Encino strip mall, seats a handful of people, and holds a Michelin star — the kind of arrangement that only works when the chef has decided the room does not matter. There is exactly one option: an omakase of an appetizer, miso soup, and fourteen pieces of nigiri, with fish sourced from Japan and aged or cured according to what each cut needs. Reservations are taken by telephone, walk-ins are not accommodated, and the seating window is narrow enough that the whole counter eats in rhythm together. This is the most serious sushi in the San Fernando Valley and one of the best values for a starred omakase anywhere in Los Angeles.
