James Beard Award–winning chef Dave Beran opened Pasjoli on Santa Monica's Main Street in 2019 and earned a Michelin star in 2021. The Canard à la Presse — a whole duck carved tableside and pressed in a stainless-steel vice while half the dining room watches — remains the defining dish: theatrical, expensive at $350 for two, and requiring an advance reservation just to order it. In 2025 Beran reimagined the restaurant as a more relaxed neighborhood bistro, but the kitchen's ambition never loosened.
