The result was a restaurant in a former Chinese karaoke bar on Sunset that has spent a decade being one of the loudest, most festive rooms in Los Angeles. The fish sauce chicken wings are the entry-level obsession, but the khao man gai — poached chicken on rice with ginger broth — is the dish that shows what the kitchen can do when it slows down.
