Evan Algorri cooked at Lupa and Marea in New York before opening Ètra on the stretch of Western that has quietly become Melrose Hill's restaurant row. The menu is Italian without being a survey course: a short list of pastas made properly, a few large-format proteins off the fire, and vegetables that get the same attention as everything else. The rigatoni gricia — guanciale, pepper, an onion soubise that does the work cream usually does — is the dish people come back for. The room is dark, loud in the good way, and small enough that the bar is a legitimate place to eat rather than a holding pen. Among the newer Italian restaurants in Los Angeles, this is the one that feels least concerned with being noticed.
