Zack Hall opened Cosa Buona as a love letter to the red-sauce Italian-American cooking that neither pretends to be authentic nor apologizes for the adaptations. The grilled pizza — cooked over wood fire rather than baked in an oven — has a char and chew that most pizza restaurants can't replicate, and the Sunday gravy program gives the kitchen a reason to come in early on weekends. The room on Sunset is comfortable and casual in a way that high-end restaurants spend money trying to achieve, and the prices reflect that this is a neighborhood restaurant that wants its neighborhood to be able to afford it.
