About Bub and Grandma's

Andy Kadin started Bub and Grandma's from his backyard, supplying naturally leavened sourdough to the top restaurants in Los Angeles long before most of those restaurants knew his name. The bread program — long fermentation, proper crust, crumb structure that holds up — became the foundation for a bakery-cafe that eventually opened to the public and immediately had a line. The brisket sandwich, built on a house sub roll with braised brisket, apple mostarda, and arugula, is the daytime anchor, and the baguettes that come out of the oven throughout the morning are the reason professional chefs cite this bakery when asked where they'd send someone who wanted to understand LA's bread scene.
