Jason Wang's family started Xi'an Famous Foods in the basement of the Golden Shopping Mall in Flushing, and the move to Manhattan made one of the great regional Chinese food traditions accessible to the whole city. The hand-ripped noodles — pulled to order with an irregular texture that holds sauce in a way a machine-cut noodle cannot — are dressed with cumin-spiced braised lamb, chili oil, and vinegar, and the combination is one of the most satisfying cheap meals in New York. The liang pi cold skin noodles are the summer version: cold, slippery, sour, spicy. The rou jia mo lamb burger is the easy companion. Xi'an Famous Foods is a reminder that great food does not require a dining room.
