Josh Ku and Trigg Brown opened Win Son on a Graham Avenue corner in 2016 with a premise that was not obvious at the time: Taiwanese-American food cooked by people who are Taiwanese-American, without translating it into something else. Fly's head — minced pork, garlic chives, fermented black beans — is the dish that gets ordered at every table and the one people describe when they try to explain the restaurant. The fried chicken bun is enormous. There is a bakery across the street from the same team, doing scallion pancakes and egg sandwiches in the morning. The room is small and plant-filled and has been busy for close to a decade, which in this neighborhood counts as permanence.
