Szechuan Mountain House does Sichuan cooking without adjusting the heat or the numbing málà for a general audience, and that is the entire reason to go. The mapo tofu is oily and properly floral with Sichuan peppercorn; the fish dishes arrive submerged in chili oil; the cold appetizers are as good as the cooked plates. The Flushing dining room is decorated as a stylized courtyard, which is more elaborate than the food requires but does no harm. Waits on weekends are substantial. It has expanded to Manhattan, but the Prince Street original is the one Flushing regulars still name.
