Sripraphai Tipmanee started selling Thai desserts out of a small storefront in Woodside in 1990 and gradually built the restaurant that changed what New Yorkers expected Thai food to taste like. The kitchen does not moderate heat or sweetness for the room, and the menu is long enough that regulars are still working through it decades later. The crispy watercress salad — fried until it shatters, tossed with shrimp, chili, and lime — is the dish everyone is sent here for. The boat noodles and the duck curry justify the trip on their own. It is a long dining room in Queens with no atmosphere to speak of and a serious kitchen.
