Nan Xiang has been making soup dumplings in Flushing since 2006 and is the reference against which everyone else in the borough is measured. The skins are pleated thin enough to see the broth through and still hold together when lifted, which is the entire technical problem of the form. The crab and pork version is richer and the one worth the upcharge. Beyond the dumplings the Shanghainese menu is deep — braised pork belly, scallion pancakes, cold appetizers — and mostly ignored by people who came for one thing. Take a number, wait with everyone else, and order more than you planned to.
