David Chang opened Momofuku Noodle Bar on First Avenue in 2004 and the American dining world has not been quite the same since. The pork belly buns — steamed bao filled with braised belly, hoisin, scallion, and cucumber — became one of the most copied dishes in the country and remain one of the best reasons to order them. The ramen is serious: the tonkotsu broth is long-cooked and rich, and the spicy miso version is the most satisfying. Chang built an empire on the strength of this restaurant's cooking and the original still holds up, which is not always true of famous first restaurants.
