Kochi means skewer in Korean, and Sungchul Shim built an entire tasting menu around the form — each course arriving on a stick, drawn from the Korean royal court tradition of kkochi rather than from street food. Nine courses move quickly through fish, vegetable, and meat, with ingredients sourced from Korea and Japan and a precision that earned a Michelin star in 2022. The room on Tenth Avenue is narrow and quiet, with an open kitchen along one wall. It is one of the more interesting fixed-menu meals in Manhattan and, at its price, one of the more defensible. Hell's Kitchen is not where anyone expects to find this.
